Legendary in its stature,
monumental in its impact, the Culinary Institute of
America looms on a rise high above the Hudson River
just north of Poughkeepsie. The largest culinary educational
institution in America, the CIA impacts our epicurian
lives as it dominates the Hudson.
Housed within the building
are gourmet restaurants open to the public and staffed
by the students exercising their newly discovered
talents. Although you might consider that you are
a test subject of their mysterious laboratories, your
taste buds and happy smiles will bring you back again
and again for more of this kind of torture.
Tours of the CIA are available
twice daily, at 10am and 4pm. Your tour will take
you on an extensive visit of the depths of the facility,
from classrooms to board rooms, from scullery to kitchens.
You will meet many of the students and sample their
work as you wander the halls of this most delictable
of schools.
During the warm months,
reservations for both the restaurants and the tours
are highly suggested as it fills up quickly, especially
on the weekends. Mid-week spontaneity may, however,
be rewarded with a slot on the tour or a chair at
the table. |
